Today is cleaning fridge day again and I have zucchinis to use up. As it’s turning to be a tradition, Monday is pizza day. Next time I’ll try the gluten free pizza dough and yellow tomatoes.
Zucchini and Blue Cheese Pizza
4 servings
Ingredients
1 large or 2 small zucchinis
1 large tomato, thinly sliced
Store bought whole wheat pizza dough
¾ cup grated mozzarella
¼ cup crumbled blue cheese
Fresh oregano leaves
Directions
Cut zucchini in very thin slices. Sprinkle with salt and let rest in a coriander for 30 minutes. Drain well. Spray pizza dough with olive oil. Top with half of the mozzarella. Spread oregano leaves over cheese. Cover with zucchini and tomato slices, overlapping them, and sprinkle with remaining cheese. Sprinkle with blue cheese. Bake pizza according to package instructions.
What a great way to use up zucchini. The photo makes me hungry!
